Cheddar Chicken and Rice

Prep Time: 5 minutes

Cook Time: 10 minutes

Servings: 4

A chicken and rice dish topped with melted sharp Cheddar cheese.


  1 Tbs vegetable oil

  1 1/2 cups diced onion

  2 cups chopped cooked chicken

  1 can (14.5 oz.) Del Monte® Cut Green Beans, drained

  1 can (14.5 oz.) chicken broth

  1 1/2 cups instant white rice

  1 tsp fresh oregano or 1/4 tsp. dried oregano

  1/4 tsp black pepper

  1 cup (4 oz.) shredded sharp Cheddar cheese

1. Heat oil in a medium skillet over medium-high heat. Cook onion 6 to 8 minutes or until golden brown, stirring occasionally.

2. Stir in the remaining ingredients, except the cheese. Bring to a boil over medium-high heat. Stir and return to a boil.

3. Remove skillet from heat and sprinkle rice mixture with cheese. Cover and let stand 5 minutes for cheese to melt.
